Olivier Prost est avocat associé au bureau de Bruxelles du cabinet Gide depuis 2002, admis au Barreau de Paris (1993) et de Bruxelles (1994). En 2008, il a été nommé Conseiller du commerce extérieur de la France (section Europe).

Olivier est à l'origine du développement de la pratique droit du commerce international et contentieux OMC au sein du Cabinet Gide. Il conseille les entreprises et les gouvernements dans l'utilisation des instruments de défense commerciale (anti-dumping, anti-subvention et sauvegarde). Il est également très actif sur les nouveaux sujets de régulation de la mondialisation : accès au marché, obstacles réglementaires, pratiques discriminatoires, santé et environnement, énergie, secret d'affaires et contrôle des exportations.

Il intervient aussi dans l'élaboration, l'interprétation et la mise en œuvre du droit européen dans les principaux secteurs du droit des affaires, y compris les contentieux communautaires et internationaux.

Olivier Prost est régulièrement référencé comme Leading Individual en International Trade par les guides juridiques Chambers Global and Legal 500. Il figure dès 2018 dans le nouveau classement The Legal 500 Hall of Fame, qui référence les avocats dont l'excellence est régulièrement mentionnée par les clients - le critère pour intégrer ce classement étant d'avoir été classé par Legal 500 comme l'un des meilleurs avocats (Elite leading lawyers) sept ans d'affilée.
